This is the BEST mexican food I have had in a long time. I added the ingredients for the Tinga(spicy mexican meat...it is not very hot so don't worry if you don't like hot) and put it in the crockpot. I let it mainate overnight then cooked it while we were at church. I then followed the recipe as described below! YUM!

Spicy Mexican Shredded Pork Tostadas (Tinga)

Serves 4 to 6

Ingredients

Tinga

2 pounds boneless pork butt , trimmed of excess fat and cut into 1-inch pieces
2 medium onions , 1 quartered and 1 chopped fine
5 medium garlic cloves , 3 peeled and smashed and 2 minced or pressed through garlic press (about 2 teaspoons)
4 sprigs fresh thyme
Table salt
2 tablespoons olive oil
1/2 teaspoon dried oregano
1 (14.5-ounce) can tomato sauce
1 tablespoon ground chipotle powder (I used the ungrounded since i didn't have any ground, and smashed it a little with a spoon)
2 bay leaves

Tostadas

3/4 cup vegetable oil
12 (6-inch) corn tortillas (see note)
Table salt

Garnishes

Queso fresco or feta cheese
Fresh cilantro leaves
Sour cream
Diced avocado
Lime wedges

Instructions

1. FOR THE TINGA: Bring pork, quartered onion, smashed garlic cloves, thyme, 1 teaspoon salt, and 6 cups water to simmer in large saucepan over medium-high heat, skimming off any foam that rises to surface. Reduce heat to medium-low, partially cover, and cook until pork is tender, 75 to 90 minutes. Drain pork, reserving 1 cup cooking liquid. Discard onion, garlic, and thyme. Return pork to saucepan and, using potato masher, mash until shredded into rough ½-inch pieces (see Step-by-Step below); set aside.
2. Heat olive oil in 12-inch nonstick skillet over medium-high heat until shimmering. Add shredded pork, chopped onion, and oregano; cook, stirring often, until pork is well browned and crisp, 7 to 10 minutes. Add minced garlic and cook until fragrant, about 30 seconds.
3. Stir in tomato sauce, chipotle powder, reserved pork cooking liquid, and bay leaves; simmer until almost all liquid has evaporated, 5 to 7 minutes. Remove and discard bay leaves and season with salt to taste.
4. TO FRY TOSTADAS: Heat vegetable oil in 8-inch heavy-bottomed skillet over medium heat to 350 degrees. Using fork, poke center of each tortilla 3 or 4 times (to prevent puffing and allow for even cooking). Fry 1 at a time, holding metal potato masher in upright position on top of tortilla to keep it submerged (see photo below), until crisp and lightly browned, 45 to 60 seconds (no flipping is necessary). Drain on paper towel-lined plate and season with salt to taste. Repeat with remaining tortillas.
5. TO SERVE: Spoon small amount of shredded pork onto center of each tostada and serve, passing garnishes separately.

Noah got his arrow of light last June, but our ward doesn't have scouts in the summer because they are heavily involved with the pageant so he didn't get this till September. He has to answer questions as he climbs each rung.

When he got to the top, his arrow was there!

Then Noah had his crossover ceremony to welcome him into the boyscout program...that he had already been going to since May..... Oh well, better late than never!

I made Sushi!! And no, sushi is NOT raw fish! It is simply Rice with fish. It can be raw, but...no thanks! I am the consummate picky eater, but this I loved. Ever time Don and I go out to eat, I pick only a handful of restaurants because I hate being disappointed. We went out with some friends, and they wanted to go to this Japanese restaurant. We went, but I wasn't excited. I did have sushi once before, and it was good, but not a favorite. This time I ordered the "Sexy Lady" which is lobster based. I LOVE IT. I went online, found a youtube video that had a "How To" make it tutorial and the rest is history. IT is so easy!. You need sushi rice, it is cooked like regular rice only with less water.

and stuff to go inside, I used Faux Crab, cream cheese, mushrooms and seedless Cucumbers.

You spread on the rice, add the toppings and roll!

You also need pickled ginger and seaweed. I did have to go to an oriental store for the best price on rice, the mat,seaweed and the pickled ginger.To my surprise, Seaweed is not gross- I thought is was before I tired it.

Here is the finished product. (This picture of the sushi and ginger the only picture that is mine!!) You place a piece of ginger onto the sushi and eat!!!!!!!!!! Yummy, Health and low calories too!

As you know, we sold our old home a couple of months ago,(Thank you,God)

And bought this one. It is in a nicer area, and it is somewhat bigger...maybe 400 square feet. We are stunned at the way we are being treated. Don't get me wrong, we were never treated poorly in the old house, but weren't treated this nicely either.

Since moving here, we have had several businesses try and woo us into using their services. Everything from free dinners, to free oil changes. It is amazing. Even the garbage service is better. In the old house, the garbage collection people were..well.. slobs! If they made a mess picking up our garbage...it was OUR problem, and we had to clean it up. Not here..there are NO messes. This morning the garbage man KNOCKED on my door, bright and early, to see if the blue barrels we'd set out to the curb were meant to be used as garbage cans, or did we intend for them to be taken away with the rest of the trash. THEN he apologized for disturbing me! At the old place, the garbage man would just take any containers they thought we didn't want any more OR would leave, week after week, containers we wanted to be removed!
In the old neighborhood, the men always looked grease, and rather scary. The man who came to my door today, was a polite, clean cut gentleman with really nice manners. And the weird thing is, we used the same garbage disposal service in both neighborhoods.
Don't get me wrong, I'm not complaining, but it's like I said, Amazing, yet sad at the same time.

I'm starting to get feeling back, i was surprised it happened already. the Dr. said it should take one month! i thought it would be much long. I'm glad there is a light at the end of this painful tunnel. Speaking of pain..i start physical therapy in three weeks:{{{{

sorry about the lack of capital letters, i'm typing one handed!

Okay. It turns out i severed 5 of the 6 nerves. the pointer finger had one nerve severed, and the middle had 2. each had conduit placed on the nerve ends and sometime (I have no idea when) feeling will return. the 2 nerves in the end of my ring finger couldn't be fixed. Don't really have a problem with that, it is probably the least important finger when it comes to feeling/sensation. if it had been my pointer finger, i would have a hard time picking my nose, and if it were my middle finger, i would probably go around flipping the bird and not even know it, but the tendon was nicked on the middle finger so who knows, i still may;}}}

The surgery- was easy...i slept through it. i did want to watch, I'm weird like that, but they wouldn't let me. The first 24 hours after was SICK! i was in a lot of pain. i wanted to hack saw my hand off...but that wouldn't work, if you think about it! i was on Vicodin for the first 36 hours...........horrible stuff. Weird dreams, constant drowsiness, SEVERE motion sickness, nausea and what follows nausea. (i didn't want to say vomit in case someone reading this has a delicate stomach). now i'm on ibuprofen. doesn't do much for pain, but at least i'm not crazy anymore...well, no more than usual. I get the bandages off thursday and hopefully i can get back to my unpacking!!! or maybe i'll milk this thing out and let the family finish unpacking!!!

Someone sent this to me, and I had to share!

Here's a possible solution to all the controversy over full-body scanners at
the airports. Have a booth that you can step into that would not X-ray you,
but would detonate any explosive device you may have on you.

It would be a win-win for everyone. There would be none of this crap
about racial profiling, and this method would eliminate a long and expensive
trial. Justice would be quick and swift. Case Closed!

This is so simple that it's brilliant. I can see it now: you're in the airport
terminal and you hear a muffled explosion. Shortly thereafter, an announcement
comes over the PA system, "Attention standby passengers, we now have a seat
available on flight number..."

A baby squirral! We nursed it for a few days, but it died. It was very sad. He/she(?)was the sweetest little thing. We would put it up on our shoulder and it would climb all around us, even on our head

We always have deer. They love the fruit trees...forget about growing a garden. Between these deer and the abundant rabbit population, it ain't gonna happen. That is a down side.
But the abundant bird population is awesome!

Basement Makeover

I made over the basement!!! I LOVE it! It was the ugly brown, rough-textured paneling. I tried painting it... YUCK. I tried wallpapering it...it peeled. So I RE-paneled it with bead board, put up new baseboard and ceiling trim and put the carpet from the living room down..we refinished the hardwood floors upstairs. TA-DA, our new game-room!

Hey, Don’t Give Terrorist Murderers a Fat Lip; Navy SEALS Criminally Charged

A couple of years ago, I was on the thankfully now-defunct “Montel” show to discuss political issues (and get berated by the unduly smug pothead with two diamond stud earrings, who hosted the eponymous show). I was on with the family of one of the Blackwater employees who was burnt to a crisp and hung on display in Fallujah by Iraqi Muslim barbarians (a redundant phrase). The family was suing Blackwater (now known as “Xe”) and placed the blame squarely on Blackwater and not the Islamic terrorists who did this. That was the point I tried to focus on during the show.

Now, U.S. troops are also getting the treatment Blackwater got. They captured one of the savage Islamic terrorists who committed this brutal, barbaric set of murders and desecrations. But they gave the guy a fat lip. And, in the Obama Islamo-pandering worldview, a swollen lip far exceeds murdering four Americans, burning their bodies to a crisp, and hanging them on display for Muslim laughing, smiling, and partying.

It should be noted that the Bush Administration wasn’t much better on these things, with Condi Clueless a/k/a Condoleezza Rice forcing Muslim “sensitivity training” on Blackwater not long after the brutal murders of the four American contractors.

Still gotta love that Obama “perspective,” which is that much worse and hits a new low in surrender monkey-ism. Yup, this is how Barack Obama wishes the Navy SEALS a “Happy Thanksgiving.” Actually, it appears he’s taken the Best Buy route and skipped the Thanksgiving greetings in favor of a Happy Eid Al-Adha wish to Muslims. And it’s truly “meaningful.” Eid Al-Adha is the Muslim “festival of the sacrifice.” And the Obama Administration is sacrificing these Navy SEALS on the alter of Islamo-pandering:

Navy SEALs have secretly captured one of the most wanted terrorists in Iraq — the alleged mastermind of the murder and mutilation of four Blackwater USA security guards in Fallujah in 2004. And three of the SEALs who captured him are now facing criminal charges. . . .

The three, all members of the Navy’s elite commando unit, have refused non-judicial punishment — called an admiral’s mast — and have requested a trial by court-martial.

Ahmed Hashim Abed, whom the military code-named “Objective Amber,” told investigators he was punched by his captors — and he had the bloody lip to prove it.

Now, instead of being lauded for bringing to justice a high-value target, three of the SEAL commandos, all enlisted, face assault charges and have retained lawyers.

Matthew McCabe, a Special Operations Petty Officer Second Class (SO-2), is facing three charges: dereliction of performance of duty for willfully failing to safeguard a detainee, making a false official statement, and assault.

Petty Officer Jonathan Keefe, SO-2, is facing charges of dereliction of performance of duty and making a false official statement.

Petty Officer Julio Huertas, SO-1, faces those same charges and an additional charge of impediment of an investigation.

The three SEALs will be arraigned separately on Dec. 7. . . .

The official handwritten statement from one of the three witnesses [was] given on Sept. 3, hours after Abed was captured and still being held at the SEAL base at Camp Baharia. He was later taken to a cell in the U.S.-operated Green Zone in Baghdad. . . .

The detainee was turned over to Iraqi authorities, to whom he made the abuse complaints. He was then returned to American custody. The SEAL leader reported the charge up the chain of command, and an investigation ensued.

The source said intelligence briefings provided to the SEALs stated that “Objective Amber” planned the 2004 Fallujah ambush, and “they had been tracking this guy for some time.”

The Fallujah atrocity came to symbolize the brutality of the enemy in Iraq and the degree to which a homegrown insurgency was extending its grip over Iraq.

The four Blackwater agents were transporting supplies for a catering company when they were ambushed and killed by gunfire and grenades. Insurgents burned the bodies and dragged them through the city. They hanged two of the bodies on a bridge over the Euphrates River for the world press to photograph.

Intelligence sources identified Abed as the ringleader, but he had evaded capture until September.

The military is sensitive to charges of detainee abuse highlighted in the Abu Ghraib prison scandal. The Navy charged four SEALs with abuse in 2004 in connection with detainee treatment.

Um, way too sensitive. If we weren’t so “sensitive,” perhaps less American troops would die. The world is laughing at this ridiculous treatment of our own men. Why would anyone want to serve if this is what they get in return? Catch a terrorist murderer and get court martialed?

So, let’s see: a one-day in-school suspension for “Kick a Jew Day” in Florida. But a court-martial for giving an Islamic terrorist multiple-murderer of Americans a fat lip. Only in America.

Give thanks tomorrow that we still have a free country. With “perspective” and “proportion” like this, it’s a wonder we still do. What an outrage.

Review: The Invention of Lying

I've been to MANY movies, some good, some not so good. Some spectacular, some disgusting. 'The Invention of Lying' goes beyond disgusting. The previews lead you to believe it is a funny lighthearted movie about, well, the invention of lying....This is soooo wrong. It is a complete and utter attempt to smear God and Religion. They mock God as an invention of the main character, MARK,(the only person in the world who can lie)to give his dying mother comfort. Someone overhears his LIE and spreads the word to the entire world.
The movie now takes on a serious tone and everything gets out of hand with people wanting answers to life's questions. They receive these answers from MARK who is the one person who gets to speak to the "man in the sky."
Questions like: Did he give my mom cancer? Yes! Did he cause a Tsunami and kill all those people? Yes... but don't worry...everyone gets a mansion in heaven!!
At one point MARK is dressed as Jesus...totally by "accident" naturally. The ten "rules" given to him by the "Man in the sky" are pasted onto two Pizza boxes-think ten commandments.
By the way,I was very surprised to see Jennifer Garner as the female lead. I HAD a lot of respect for her....:{
This was not some silly farce on religion, this was a out and out attack by the main star (who co-wrote this) on God and everyone who believes. I wish I could have gotten my money back. The only reason we stayed for the whole movie was because I was sure they would SAVE the movie in the end somehow....boy was I wrong!
Finally MARK admits he lied; then peace is restored.
Imagine if someone were to make a movie using this same type of "Slam" about Gays. I wish I could have gotten my $$$$ back!

Politicians are the only people in the world who create problems and then campaign against them.

Have you ever wondered; if both the Democrats and the Republicans are against deficits, WHY do we have deficits?

Have you ever wondered; if all the politicians are against inflation and high taxes, WHY do we have inflation and high taxes?

You and I don't propose a federal budget. The president does. You and I don't have the Constitutional authority to vote on appropriations. The House of Representatives does. You and I don't write the tax code, Congress does. You and I don't set fiscal policy, Congress does. You and I don't control monetary policy, the Federal Reserve Bank does.

One hundred senators, 435 congressmen, one president, and nine Supreme Court justices 545 human beings out of the 300 million are directly, legally, morally, and individually responsible for the domestic problems that plague this country.

I excluded the members of the Federal Reserve Board because it was created by the Congress. In 1913, Congress delegated its Constitutional duty to provide a sound currency to a federally chartered, but private, central bank.

I excluded all the special interests and lobbyists for a sound reason. They have no legal authority. They have no ability to coerce a senator, a congressman, or a president to do one cotton-picking thing. I don't care if they offer a politician $1 million dollars in cash. The politician has the power to accept or reject it. No matter what the lobbyist promises, it is the legislator's responsibility to determine how he votes.

Those 545 human beings spend much of their energy convincing you that what they did is not their fault. They cooperate in this common con regardless of party. What separates a politician from a normal human being is an excessive amount of gall.

No normal human being would have the gall of a Speaker, who stood up and criticized the President for creating deficits. The president can only propose a budget. He cannot force the Congress to accept it.

The Constitution, which is the supreme law of the land, gives sole responsibility to the House of Representatives for originating and approving appropriations and taxes. Who is the speaker of the House? Nancy Pelosi. She is the leader of the majority party. She and fellow House members, not the president, can approve any budget they want. If the president vetoes it, they can pass it over his veto if they agree to.

It seems inconceivable to me that a nation of 300 million cannot replace 545 people who stand convicted -- by present facts -- of incompetence and irresponsibility. I can't think of a single domestic problem that is not traceable directly to those 545 people.

When you fully grasp the plain truth that 545 people exercise the power of the federal government, then it must follow that what exists is what they want to exist.

If the tax code is unfair, it's because they want it unfair.

If the budget is in the red, it's because they want it in the red.

If the Army & Marines are in IRAQ, it's because they want them in IRAQ.

If they do not receive social security but are on an elite retirement plan not available to the people, it's because they want it that way.

There are no insoluble government problems. Do not let these 545 people shift the blame to bureaucrats, whom they hire and whose jobs they can abolish; to lobbyists, whose gifts and advice they can reject; to regulators, to whom they give the power to regulate and from whom they can take this power.

Above all, do not let them con you into the belief that there exists disembodied mystical forces like "the economy," "inflation," or "politics" that prevent them from doing what they take an oath to do.

Those 545 people, and they alone, are responsible. They, and they alone, have the power. They, and they alone, should be held accountable by the people who are their bosses. Provided the voters have the gumption to manage their own employees.

We should vote all of them out of office and clean up their mess!

Natalie and Jeremy got Lab puppy on a Monday they named Belle. She was so cute we fell in love and three days later we went and bought her sister, which we named Daisy May,(I wanted to name her Daisy, Noah wanted May so we combined them). She is mine and I can't beleive how much I love her already...I am not a BIG DOG person at all. She is really good natured ..when she isn't biting the heck out of you, and she loves to sit by my feet as I sit at my computer working on my next big block buster novel(... hopefully someday;}

We took the kids to Ocean City NJ this summer. Taylor, my "Mom, I don't need sunblock, I never burn" kid, got a really nasty sunburn! Noah didn't burn at all, lucky duck, and Holly and Don got a little burnt...what can you expect from a bunch of white folks from Upstate NY where it is NEVER sunny. I, who stayed diligently under the beach umbrella smothered in Sunblock, only got a mild burn, probably when I was in the ocean on the boogie boards!! FUN Stuff! I did, however, get sun poisoning. Itchy stuff!

Dinner at the White House... A parable

Once upon a time, I was invited to the White House for a private dinner with the President. I am a respected businessman, with a factory that produces memory chips for computers and portable electronics. There was some talk that my industry was being scrutinized by the administration, but I paid it no mind. I live in a free country. There's nothing that the government can do to me if I've broken no laws. My wealth was earned honestly, and an invitation to dinner with an American President is an honor.

I checked my coat, was greeted by the Chief of Staff, and joined the President in a yellow dining room. We sat across from each other at a table draped in white linen. The Great Seal was embossed on the china. Uniformed staff served our dinner.

The meal was served, and I was startled when my waiter suddenly reached out, plucked a dinner roll off my plate, and began nibbling it as he walked back to the kitchen.

"Sorry about that," said the President. "Andrew is very hungry."

"I don't appreciate..." I began, but as I looked into the calm brown eyes across from me, I felt immediately guilty and petty. It was just a dinner roll. "Of course," I concluded, and reached for my glass. Before I could, however, another waiter reached forward, took the glass away and swallowed the wine in a single gulp.

"And his brother Eric is very thirsty." said the President.

I didn't say anything. The President is testing my compassion, I thought. I will play along. I don't want to seem unkind.

My plate was whisked away before I had tasted a bite.

"Eric's children are also quite hungry."

With a lurch, I crashed to the floor. My chair had been pulled out from under me. I stood, brushing myself off angrily, and watched as it was carried from the room.

"And their grandmother can't stand for long."

I excused myself, smiling outwardly, but inside feeling like a fool. Obviously I had been invited to the White House to be sport for some game. I reached for my coat, to find that it had been taken. I turned back to the President.

"Their grandfather doesn't like the cold."

I wanted to shout- that was my coat! But again, I looked at the placid smiling face of my host and decided I was being a poor sport. I spread my hands helplessly and chuckled. Then I felt my hip pocket and realized my wallet was gone. I excused myself and walked to a phone on an elegant side table. I learned shortly that my credit cards had been maxed out, my bank accounts emptied, my retirement and equity portfolios had vanished, and my wife had been thrown out of our home. Apparently, the waiters and their families were moving in. The President hadn't moved or spoken as I learned all this, but finally I lowered the phone into its cradle and turned to face him.

"Andrew's whole family has made bad financial decisions. They haven't planned for retirement, and they need a house. They recently defaulted on a sub-prime mortgage. I told them they could have your home. They need it more than you do."

My hands were shaking. I felt faint. I stumbled back to the table and knelt on the floor. The President cheerfully cut his meat, ate his steak and drank his wine. I lowered my eyes a nd stared at the small grey circles on the tablecloth that were water drops.

"By the way," He added, "I have just signed an Executive Order nationalizing your factories. I'm firing you as head of your business. I'll be operating the firm now for the benefit of all mankind. There's a whole bunch of Erics and Andrews out there and they can't come to you for jobs groveling like beggars."

I looked up. The President dropped his spoon into the empty ramekin which had been his creme brulee. He drained the last drops of his wine. As the table was cleared, he lit a cigarette and leaned back in his chair. He stared at me. I clung to the edge of the table as if were a ledge and I were a man hanging over an abyss. I thought of the years behind me, of the life I had lived. The life I had earned with a lifetime of work, risk and struggle. Why was I punished? How had I allowed it to be taken? What game had I played and lost? I looked across the table and noticed with some surprise that there was no game board between us.

What had I done wrong?

As if answering the unspoken thought, the President suddenly cocked his head, locked his empty eyes to mine, and bared a million teeth, chuckling wryly as he folded his hands.

"You should have stopped me at the dinner roll," he said.

Don and I have had enough! A lawyer has drawn up an agreement that we feel is fair. The following is our divorce agreement.

DIVORCE AGREEMENT 2009

Dear American liberals, leftists, social progressives, socialists,
Marxists, Obama supporters, et al:

We have stuck together since the late 1950's, but the whole of this
latest election process has made me realize that I want a divorce. I
know we tolerated each other for many years for the sake of future
generations, but sadly, this relationship has run its course.

Our two ideological sides of America cannot and will not ever agree
on what is right so let's just end it on friendly terms. We can smile
and chalk it up to irreconcilable differences and go our own way.

Here is a model separation agreement:

Our two groups can equitably divide up the country by landmass each
taking a portion. That will be the difficult part, but I am sure our
two sides can come to a friendly agreement.

After that, it should be relatively easy! Our respective
representatives can effortlessly divide other assets since both sides
have such distinct and disparate tastes.
We don't like redistributive taxes so you can keep them. You are
welcome to the liberal judges and the ACLU, and abortion clinics.

Since you hate guns and war, we'll take our firearms, the cops, the
NRA and the military. You can keep Oprah, Michael Moore and Rosie
O'Donnell....

We'll keep the capitalism, greedy corporations, pharmaceutical
companies, Wal-Mart and Wall Street.
You can have your beloved homeless, homeboys, hippies and illegal
aliens.

We'll keep the hot Alaskan hockey moms and rednecks. We'll keep the
Bibles and give you MSNBC, NBC and Hollywood ...
You can make nice with Iran and Palestine and we'll retain the right
to invade and hammer places that threaten us.

You can have the peaceniks, and war protesters. When our allies or our
way of life are under assault, we'll help provide them security.

We'll keep our Judeo-Christian values.

You are welcome to Islam, Scientology, Humanism and Shirley McClain.
You can also have the U.N., but we will no longer be paying the bill.
We'll keep the SUVs, pickup trucks and oversized luxury cars. You can
take every Subaru station wagon you can find.

You can give everyone healthcare if you can find any practicing
doctors. We'll continue to believe healthcare is a luxury and not a
right. We'll keep The Battle Hymn of the Republic and the National
Anthem. I'm sure you'll be happy to substitute:
‘I'd Like to Teach the World to Sing’, ‘Kum Ba Ya’ or ‘We
Are the World.’

We'll practice trickle down economics and you can give trickle up
poverty your best shot. Since it often so offends you, we'll keep our
history, our name and our flag.

Superman:Ride of Steel

Every year, Don buys amusement park passes for him, Holly and Noah.( I get sick on the rides so I never go!) Poor Noah has never been able to ride the SUPERMAN: Ride of Steel...until today!! I got a phone call while they were at the park from Noah. He was SOOOOO excited and couldn't wait to tell me. I asked if it was scary...he said no way!

My brother John and his wife just had their first child, They named him Blake Oliver (my Bros. middle name is Oliver),and they call him Bo

This is my brother's first child(he's 47) and they were pretty excited. As soon as I found out the gritty details(weight, height) I'll post it--I'm quite sure you'll all be on pins and needles waiting until then ;}

OKAY!! The wait is over! Blake Oliver (Bo) was born on May 27 at 6:15 AM. He was a whopping 7lbs 8 oz and 20 inches.'
Whopping was my brother's exact word....try 9 lb...as your smallest!!! and 10.5 as my largest, now that's WHOPPING!
